Chilaquiles Salsa

A great spicy salsa to use in many Mexican recipes! Works great in Chilaquiles Rojos. Stores great for easy meal prep.

Servings 6 8 oz Jars

Ingredients

  • 4-10 Jalapeños with seeds (can remove if you like it less spicy)
  • 6 Roma Tomatoes
  • 2 Beefsteak (or larger tomatoes)
  • 6-8 cloves Garlic
  • 1 Yellow Onion
  • 1 tsp Onion Powder
  • 1 tsp Salt
  • 1 tbsp Goya Adobo Seasoning If you don't have, just double garlic powder and salt
  • 1 tsp Garlic Powder
  • Black Pepper to taste

Instructions

  1. Cut Stems of Jalapeños

  2. Remove tops of Tomatoes

  3. Remove outer layer of garlic and Onion

  4. Cut Onion in 4

  5. Place all in a pot with water to boil

  6. Let sit for an hour until soft

  7. Strain all the liquid and put all ingredients in pot including the seasonings. 

  8. Blend with emersion blender or put in blender and blend until smooth

  9. Taste for salt (sometimes you need to add a little more salt depending on the tomatoes you use to cook)

This salsa works on everything! Eggs, Nachos, Sandwiches, you name it you can use it! Go fourth and eat!
