Avocado Fries

Crunchy on the outside, creamy on the inside, baked avocado fries are the perfect healthy alternative to french fries. Eat healthy without losing flavor with this recipe from your favorite Latina, Busy Mami.

Ingredients

  • 4 Avocados
  • 2 Cups Flour
  • 1 Egg
  • 1 Cup Italian Breadcrumbs

Instructions

  1. Cut avocados in half
  2. Remove pit and skin
  3. Slice into 1/4 inch slices
  4. Scramble the egg
  5. Place egg, flour and breadcrumbs in 3 separate dishes
  6. Coat avocado slices in Flour, Egg then Breadcrumbs

  7. Place coated avocado on baking sheet covered in parchment paper
  8. Bake at 425° for 30 minutes
  9. 1/2 way mark flip and then top with Parmesan cheese
  10. Serve and enjoy
