Cauliflower Fried Rice

  • 2 lbs Chicken thighs and breast
  • 1 head of cauliflower
  • Sesame oil
  • 1 cup carrots
  • 3/4 cup zucchini
  • 1 cup soy sauce
  • 2 tbsp esame seeds

Garlic butter

  • 3 tbsp butter
  • 2 tsp minced garlic
  • 1 tbsp soy sauce
  • Salt and pepper


  1. Dice up chicken, add salt pepper and 1 tbsp of sesame oil and add to a hot wok
  2. Sauté the chicken remove from pan set aside.
  3. Cut up head of cauliflower into pieces put in food processor and pulse until riced. (Depending on your food processor size you might need to do this into batches)
  4. Heat wok on medium low heat add 1 teaspoon of sesame oil and add riced cauliflower to the wok and sauté for about 20 minutes to let it dry out.
  5. Once 20 minutes have passed, add your favorite veggies for this recipe I added one cup of chopped carrots, and three-quarter cup of chopped zucchini mix together and cook for about 10 minutes
  6. Make a well in the middle of the pan add 1 tablespoon of sesame oil and add four eggs and one shot of soy sauce and scramble in the middle of the wok once the eggs are cooked combine all together and make another well in the middle.
  7. To the well add 3 tablespoons of butter, 2 teaspoons of minced garlic, 1 tablespoon of soy sauce let butter melt and mix it all together and then incorporate into the rice.
  8. At this point if you want to add sesame seeds make a well in the middle and toast them up and then incorporate all together along with the chicken that you cooked earlier and add 1/4 cup of soy sauce and some salt and pepper to your taste and stir together. Let it sit together for 10 minutes and then serve.
