A healthy low-carb alternative to pizza. This easy recipe for zucchini pizza is made with 3 vegetables, and is a grate (see what I did there) way to get your kids to eat their veggies. Even better, it's delicious and so yummy you won't miss the carbs!

Adjusting the toppings can make this recipe Keto, Optavia or Paleo diet compatible.

Ingredients
  • 8 Zucchini
  • 2 Carrots
  • 1/2 Onion
  • 2 eggs
  • Pizza Seasoning
  • 1 Cup Parmesan Cheese
  • 1 Cup Flour
Instructions
  1. Shred Zucchini, carrots and onions
  2. Place Vegetables in a bowl with a dish towel
  3. Wring out liquid
  4. Remove vegetables from dish towel and place in bowl
  5. Stir in eggs, pizza seasoning, Parmesan Cheese and Flour in stages
  6. Stir well to combine
  7. Spread evenly on baking sheet
  8. Bake at 375 for 35 minutes

  9. Add Pizza Sauce

  10. Add Pizza Toppings
  11. Bake at 325 for 15 minutes
