Simple Puerto Rican Potato Salad Recipe
Ingredients
- 10 lb white gold
- 1/4 onion
- 1 red peppers
- 2 green peppers
- 3/4 green apple
- 1 3/4 container of mayonnaise
- 1/4 cup Mustard
- 1 tbsp salt
- 14 eggs
- 1 tbsp tony chachere
Instructions

hard boil then peel eggs

peel and boil potatoes

mash up potatoes (partially)

Dice peppers, onions, apple and eggs

Mix ingredients
This simple (Puerto Rican, mexirican….or just let’s say Busy Mami) potato salad is the perfect side to bring to any party (Christmas, Block Party, Super Bowl).
I’ve been perfecting this recipe for years and it was originally brought to me by my dad. He always would make it to go with Pernil for our summer block parties and it has since evolved as a side that’s requested for almost all of our family parties!
