This simple (Puerto Rican, mexirican….or just let’s say Busy Mami) potato salad is the perfect side to bring to any party (Christmas, Block Party, Super Bowl).

I’ve been perfecting this recipe for years and it was originally brought to me by my dad. He always would make it to go with Pernil for our summer block parties and it has since evolved as a side that’s requested for almost all of our family parties!

The best part is that it’s customizable, it’s made for you to use as a guide and change it up from the ingredients you add to the type of potato’s! Have fun, and live long and potato!
