Damnit Janet! That’s some good Banana Bread.

Janet (the banana bread pro) joins me on this edition of Busy Mami and Friends and shares her tasty secret recipe with me. We make three different versions, blue berry, pumpkin and chocolate chip banana bread, but the best part of this recipe is that you can add just about anything to the base.

Banana Bread

Ingredients
  • 3 very ripe bananas peeled
  • 1/3 cup melted butter unsalted or salted
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1/2 cup sugar
  • 1 large egg beaten
  • 1.5 teaspoon vanilla extract
  • 1 1/2 cups of all-purpose flour
  • 1 tsp cinnamon
Instructions
  1. Peel and mix 3 ripe bananas
  2. Add melted butter to mixed bananas
  3. Add Salt and baking soda and mix
  4. Mix in vanilla, Egg, Sugar and cinnamon
  5. Slowly mix in Flour
  6. Coat baking pans in non-stick spray or butter
  7. Fill baking pans halfway
  8. * If you want to add toppings now is the time (blueberries, chocolate chips, etc.)

  9. Bake in over at 350° for 45 minutes rotating halfway through
