Spinach and Chicken Roll-Ups

Take all the best parts of spinach dip and make it a meal. This is also a great Keto dinner full of flavor.

  • 5-6 Garlic Cloves
  • 1 Bag of pre-washed Spinach or one package of Frozen Spinach
  • 8 oz of Cream Cheese
  • 1 Tbsp of Casa Seasoning
  • 1 cup of Shredded Mozzarella
  • 5 Thinly sliced Chicken breasts
  1. Preheat oven at 375 degrees
  2. Chop Garlic
  3. Put 1tsp of oil in hot pan and sauté garlic and spinach until the spinach is fully wilted about 5 mins.
  4. Add cream cheese and mozzarella (pro tip, throw in a pinch of crushed red pepper here, to add a little kick)
  5. add casa seasoning and mix until all melted together (about 5 mins)
  6. lay out chicken breast and salt and pepper to taste
  7. add filling to the chicken and roll up chicken breast
  8. 1tsp of oil to a pan Brown chicken in a pan to seal the edges to add that delicious flavor (not needed, but recommended) about 2 mins per side (top and bottom)
  9. Place chicken in oven-safe baking pan or glass pan and bake at 375 for 25-30 mins. Top with extra mozzarella or parm and you got yourself a delicious meal.
